(Side note--by yesterday, I actually mean back in May because I never hit the publish button....oops.)</p><p>A few days ago, we were at the drugstore and saw some really cute chocolate lambs, so we thought it would be fun to make a cake, so we bought a few. It was Mother's Day so it was a good day to celebrate and used the lambs to decorate a cake. It is a beautiful morning in my little valley and this morning I got to enjoy it on a walk with Vanilla Bean....well sort of. Last evening, both of us had just finished an evening run when I called her to check who was taking care of our post today (she has been good enough to pick up some slack that I created the last couple days - I had told her I was taking care of I.....). However, we got sidetracked in our conversation and in the end scheduled a morning walk together via cell phone. And we actually managed to do it. I don't know if I would have talked myself into a walk this morning if I was "meeting" up with her. <br />

This is a cookbook I have no idea how I acquired....well, I think I know how I got it...but a key character in my recollections is confident she never had this cookbook, so I don't know how I got it...perhaps I stole it and I apologize if I did but you may have to pry it from my hands now as I don't really desire to give it up. A month or so ago, I realized there were several smoothie type recipes in this cookbook and I was eager to try one, but had never gotten around to it and today was the perfect day. Alas, none of my cookbooks start with J!<br />

So instead I decided to make two versions of cream cheese substitute for those who can eat dairy but can't eat all the assorted additives.<br />
<br />
The first is easiest for everyday use. Say on bagels! or in the dressing of cold sandwich salad. Simply take your favorite yogurt, drop it in a coffee filter/, and let it drain overnight in the fridge. I use a 6 % plain yogurt from Snowville Creamery.<br />

Take two is a new try from a cookbook of my sister's The Home Creamery. It suggests making your own buttermilk (2 c milk, 2T vinegar, let sit 15 minutes) and then heating/wait 2 hours/draining that for a Buttermilk Cheese that can be substituted in cooking for cream cheese. Say making a cheesecake. <br />

One thing that surprised me in the making of this one, was that it formed a sort of melted cheese mass at the bottom of my pot when I was heating this. Not sure if it was supposed to do this....<br />

And now in the morning, I can see that it has a more grainy ricotta look to it. May have not gotten some part of following this recipe quite right. Oh well, still tasty results!<br />

This cookbook brings back memories. One thing I am very grateful for is all the diverse international foods I was exposed to in my childhood before all the food allergy/sensitivity biz kicked in, and this book was one of several Mom used with us in making the homemade variety of foods.<br />

For tonight's midnight snack/slash lunch tomorrow, I went for the Mexican Open Face Sandwiches. I happened to skip a sauce tonight, but replacing the tomato sauce with butternut squash sauce is a good alternative for this and for pizza if you can't have tomatoes.<br />

It has made the Travelling Spoons blog before, just not during April. I met "Leon" not the actual Leon but the restaurant one day as I was strolling around London and needed to find a place to have lunch. I had a delicious meal and loved the atmosphere and was instantly drawn to the many cookbooks they had for sale. This day I was able to overcome my impulse to buy one...mostly because of the thought of carrying a heavy cookbook around for the rest of the day. Well, I bought one when I got home off of amazon....and later I bought some more.... The most recent one of I have acquired is called "Happy Salads". It is an inspiration to eat more salad, I initially saw it and wanted to buy it for a birthday gift for my good friends birthday, because she makes the best salads, but couldn't resist getting one for myself also. <br />

Every salad I have made out of it so far has met approval. In an early post - the "B" post, I served a salad with our Pizza-in-a-Burger and it just happened that that salad was from this book also. Today I am going to share with you Leon's Mexican Salad.<br />

I many times am able to resist going and buying items to make those tasty morsels, but this time I immediately snatched up the three items needed. It is interesting the look your friends give you when you tell your friends the package of seaweed you have sitting on the counter was an "impulse" buy. I am not sure if I was so eager to grab it because it was so good - which it was very tasty...or because it was easy and healthy....or rather it was because I had just come from a 4 mile run and it was lunch time and anything would have tasted fabulous about the time - yes, one of the worst times to go grocery shopping.<br />

So what were the three items I needed. Well you already know one was seaweed, the other two were a cucumber and couscous salad - which I am going to have to figure out how to make. I am thinking it was couscous, garbanzo beans, lime juice, olive oil, chopped parsley, and maybe some parmesan cheese - but I am not sure. All you have to do is slice the cucumber and then top each cucumber slice with a square of seaweed and a dollop of the couscous salad and wallah you have a tasty little snack, as well as a good intake of veggies. <br />

As I was looking through my cookbooks, I came across a few that particularly remind me of friends. So today in honor of them, today I have chosen a thin little "pamphlet" some might call it. I am not sure I would entirely call it a cookbook, but it is stored with my cookbooks because it has recipes in it. It came with a stoneware casserole dish I purchased a number of years ago at a friend's party. The dish broke some time ago, long enough ago, I don't even remember how. My friend who had the party died of cancer eight or nine years ago and when I pulled it out it made me think of her. I miss her kind heart, sweet words, and smiling face. When I had a period of time when I wasn't able to drive, she would frequently send her son to take me places, whether it was to church, or to get home from somewhere, or even to get to and from youth group. <br />

So for today's post I looked through that little pamphlet and chose "Mexican Enchilada Casserole", truthfully it is not really a typical recipe for me, because though they taste very good I try to avoid recipes that take cream soups and this one takes two. It turned out good, but I would serve it with sour cream or use regular Rotel tomatoes rather than hot, because it has a bit of a kick. However if you like spicy that is fine. It is a rather easy recipe and would be good for an easy dinner with friends.<br />

First you layer quartered tortillas. Then layer it with onions, chicken, cheese, and the sauce (which is made of the cream soups, Rotel, and chicken broth). Another layer of tortillas, and so on, until you end with tortillas and an extra layer of cheese. Bake for an hour, and it is ready to eat.<br />

The word represents that feeling of settled contentment one experiences on a perfect Saturday morning at home or when out spending time with friends at a local coffeehouse. I find I love not just the sound of the word and the feel of it on the tongue as you say hygge, hygge, but I also love finding a word for that wonderful sense of place and space and being present in moments of simple abundance and pleasure.<br />

And then took to the internet to find a rice milk recipe alternative to assuage a craving for ice cream. <br />

My choice was largely influenced by my forgetfulness over the weekend. I had been looking forward to a local church's Maple Syrup Festival that they have every year to raise money for missions and I managed to forget about when Saturday morning rolled around. However, my good friend who goes to church there gladly agreed to get me a pint of maple syrup on Sunday and offered to pick me up some sausage also. Sunday afternoon after watching "Singing in the Rain" at one of the local high schools, I stopped by her house to pick it up. Unfortunately, or maybe fortunately, her boys were watching Zootopia and sucked me into the end of it, followed by a reading of Dr. Suess's "Fox in Socks"(read by their 7 year old) and then "Green Eggs and Ham" (read by me after being prodded by their 3 year old), my one pack of sausage was starting to thaw till I got home so I put it in the refrigerator to use this week.<br />

This cookbook is not one I have utilized much, I haven't had it more than 3-4 years and purchased it mostly for nostalgic value. It reminds me of summer days as a child. We lived outside of town and most of our trips to town were for milk, the bank, or the occasional video rental, but we were close enough we could always hear the fire whistle when it went off and if the ambulance or firetruck came out of the south side of town we would dash to the window or the backyard where we would catch glimpses of their flashing lights if they made it out to the main highway. The days I remember most though, when I look at this cookbook, are late summer Saturdays when we would hear a menagerie of sirens and whistles coming from town and we would run to find mom and remind her that we had forgotten or missed the sign announcing the firemen's dinner yet again and could we go get chicken. Most times, we would be told to freshen up and hurriedly pile in the van and make our way to town for chicken, saving mom from having to make dinner and giving dad an opportunity to visit with some of the locals in town.</div>

The last time I happened to be at mom and dad's on a Saturday like that, it was held at the new park where the old school had been torn down and they had games for the kids and a car show. At one of the tables they were selling these cookbooks so I decided to get one. Yesterday while visiting my dear friend Holly, another friend called about having an evening of supper and cards and Holly why don't you all just come here, so I cooked supper at Holly's and we then finished the evening with a game of Hand and Foot. After looking for a recipe a little I opted for Pizza-in-a-Burger and threw together a salad to go with it. It was pretty good, but I forgot to add the parmesan and they fell apart rather easy, but we still ate them up pretty readily.</div>

We missed the theme reveal this year despite having talked about it multiple times and having a theme picked out by the new year.....<br />

Although I have been planning to do the A to Z Blogging Challenge the entire time, I have been struggling to get motivated, not because I am unexcited about our theme this year but rather because my camera has been on the blinks.....and somehow I just couldn't be excited without being able to share with you all on some level a visual stimulus of the food I would love to share with you, if it were that you were here on my very own front porch. I had sent my camera to get fixed earlier in the year and got it back just before lending my other camera to a friend who is in New Zealand until June, only to find out that it wasn't really fixed and I needed to send it back again. I was beginning to think that I would not be able to do the challenge this year as desired and began to think of other ways to participate and in doing that came up with another theme that I find equally exciting (<a href="http://thisnanorebel.blogspot.com/2017/03/an-april-challengelets-see-how-it-goes.html" target="_blank">My NaNoWriMo Rebellion meets April</a>) and now instead of trying to do just one blog, I have somehow talked myself into doing two blogs through April, because my camera arrived back yesterday---and hopefully it is truly fixed this time. Perhaps I am setting myself up for failure all around, but lets hope not. <br />

So what is the theme for Travelling Spoons this year? <br />

The plan for this year's April blogging is to just make recipes from cookbooks we already own (or recipes we have already collected), no heading to the internet or library this year in search of a recipe to fit our needs, only to our very own shelves and crooks and crannies.<br />

Now don't worry that there won't be variety, as my cookbook and recipe collection is quite extensive. I will even give a quick glimpse into some of those crooks and crannies...<br />

I came across this recipe for <a href="http://www.chinasichuanfood.com/yang-chun-noodles-easy-soy-sauce-noodles/" target="_blank">Yang Chun Noodles- Easy Soy Sauce Noodles</a> when I was looking for Y foods and had it in the back of my mind for a nice simple meal to try sometime. Saturday evening after spending several hours down at the <a href="http://travellingspoons.blogspot.com/2016/04/c-is-for-community-gardens-and.html" target="_blank">garden</a>, getting the soil loosened and a few seeds in the ground, this sounded like just the thing. It turned out to be fast and the ultimate in comfort food. (Right up there with chicken noodle soup, except faster! Seriously, I had my bowl of hot soup from start to eating in under 10 minutes.)<br />

I used spelt noodles and threw in a dash of dried chives instead of the green onion. For greens I used a few leaves of kale. The lard I had on hand from trying to get more Vitamin D. (In case there is anyone else with a low vitamin d level who cannot take supplements - <a href="http://www.prevention.com/food/should-you-be-eating-lard" target="_blank">Vitamin D in Pastured Pork Lard</a>) The soy sauce I replaced with my "speedy not-soy sauce" soy sauce replacement, which basically involves stirring in a bit of blackstrap molasses, salt, and a dash of vinegar. There are better, closer to the real thing faux soy sauce recipes out there, of course, but I am lazy and this works well enough for me. Of course, I haven't had the real thing in more than 10 years now, so.... take that with a grain of salt!<br />

I first heard of Welsh Rarebit at an old haunt of mine, which sadly is no longer in existence, the Bliss Cafe. It was a small town coffee shop that had a few sandwiches on the menu, as well as various coffee and tea speciality drinks. I would frequent there often to meat up with friends or work on the latest puzzle they had set up and in their busy days they would have various music groups in to play some weekends and my friends and I could frequently be found in the audiences. At some point, I am not sure why, but they stopped having regular hours and you never knew when they would be open, and eventually they closed. I miss that little coffee shop, but my guess is the owner just moved on to other things. But back to Welsh Rarebit, it was on one of those weekend evenings when they had an entertainment group in and the place was packed. However it wasn't a music group this time, it was a reader's theater. Truthfully, I don't even remember what story they were telling, but in congruence with whatever story it was, they had a special on the menu -- Welsh Rarebit. It was referenced in the reader's theater and they decided to serve it, with toast cut on points. <br />

So what is Welsh Rarebit you ask, well simply put it is melted cheese on toast. Almost like a cheese fondue, but you add cayenne, mustard, Worcestershire sauce to it. We came across the recipe in a mustard cookbook I gave to the Colonel for his birthday one year and the gift soon became contingent on the fact that he make us this dish or at least let us have the recipe. And that was the end of that, soon the Colonel was hooked.<br />

Vichyssoise is basically put - a chilled potato and leek soup. It reminds me of gazpacho in the way is eaten cold, but this particular recipe I used is a rather versatile soup and can be eaten hot, cold, pureed, chunky, etc. I am not sure if you can call it a vichyssoise if it is not chilled and/or pureed, but as I am not French and have never had it before it is the best I can do. My pot of soup turned out very tasty and was rather simply put together, as I just sauted some onion and garlic together and then add my leek confit, a peeled and cubed potato, chicken broth, and milk and let simmer for an hour. Tasty supper for me....however despite the ease, I had been snacking all the while it simmered and was only up for a small bowl.<br />

Inspired by this absolutely gorgeous looking <a href="http://www.realsimple.com/food-recipes/browse-all-recipes/rhubarb-upside-down-cake" target="_blank">upside down rhubarb cake </a>over at Real Simple that is definitely going on my list of things to make once I get my hands on some rhubarb, and Tinbugs brownie for one recipe <a href="http://travellingspoons.blogspot.com/2016/04/o-is-fororange-olive-oil.html" target="_blank">the other day</a>, I set out this afternoon to see if I could make an upside down cupcake for one with buckwheat flour.<br />
<br />
Hurdle #1:<br />
All the buckwheat cake and cupcake recipes I could find called for ingredients I couldn't use- eggs, almonds, gluten free rice/garbanzo bean flours, bananas or that I just couldn't use today- milk, yogurt, wheat flour.<br />
<br />
After awhile, I gave up and just used a partial pancake recipe with extra sugar, cocoa powder, and less water. (This is the "it works!" version only for someone on a very limited diet. Otherwise, this is the "meh" kind of take it or leave it cake option. Try a different version if you have any alternative!!)<br />
<br />
Hurdle #2:<br />
How long to bake it for? All the recipes I looked at said 350 for 15 minutes. Yeah.... Not so much for these. Unfortunately for me, I forgot that only half the cupcakes had the upside down jelly/butter topping. Turns out, only the ones with no topping were done. The ones with the topping were only baked on the outside. I stuck my knife into one of the no topping ones, but I wanted to eat one of the topping ones. I let them cool. I flipped them upside down. I thought they looked awesome. Then I cut into one. (I should have noticed the slowly forming sinkholes in the tops and been more wary.)<br />
<br />
Instead, I took a few photos while I munched on pieces of one of the plain mini-cakes and tried to pretend it didn't taste like a green tea flavored, too dry muffin.<br />
<br />
Once I cut into one, it flowed like a lava cake. This is a great thing in a molten chocolate lava cake made from wheat and butter and eggs and so on that turns into an awesome gooey, decadent pudding. This is terrible thing in a buckwheat flour mini cupcake. Like disgusting and inedible kind of terrible. Sigh.<br />
<br />
Hurdle #3:<br />
Salvaging the disaster into my dessert for dinner. Like I mentioned before, I had made a couple upside down cupcakes and a couple just cupcakes. There was still a plain cupcake left. Perfect for making a jam layer cake cupcake!<br />

I personally have never really been much of a tabasco person, but it was always a staple at our house growing up. Last summer, when I was planning an epic road trip to the south, I realized that the Tabasco plant was in Louisiana and I made sure it was on our itinerary. Now, after being to the plant and learning its history and how it is made, tabasco is one of those things I just really want to like, I have a bottle in my fridge and every once in a while pull out and use it. It is still a staple at my parents home, both the original little red hot sauce bottle and now also a slightly larger bottle of the green sauce. <br />

What stuck in my head though, was tabasco ice cream. You are probably now thinking, "WHAT?!? Who eats TABASCO ICE CREAM?!? That doesn't even go together." Well, you're wrong. When we visited the country store on Avery Island (that is where the Tabasco plant is located), they gave out free samples of ice cream - a raspberry chipotle flavor and a sweet and spicy flavor. I bought a bottle of the Sweet and Spicy Sauce to bring home for the Colonel Mustard to make ice cream, but he liked it so much it was gone before we ever tried making the ice cream. I looked at the store for a bottle last evening but they didn't carry it, so I am going to have to look around a little to see if I can get my hand on a bottle, but lucky me the recipe I found asked for the original brand.<br />
<br />
Fire and Ice Cream. It was quite tasty. Initially dad said it needed the tabasco doubled, but that didn't stop him from eating a second bowl, basically licking it dry. And to go with the ice cream, I made a large pot of jambalaya, which also had tabasco in the recipe.<br />

One Sunday after church, one of the youth asked me how to use chopsticks. I showed him how and said the best way to learn is practice, and maybe I would have to have him over sometime and make something for lunch that he could practice on. It wasn't long until I happened upon a recipe for sukiyaki that was in a cookbook a friend of mine had given to me. This particular cookbook is a collection of her recipes that she had compiled over the years and was given to me as a gift after I had spent several summers working with her in the camp kitchen. She was in charge of the kitchen during family camp and her job was to use up what was left in stock in the kitchen after several weeks of summer camp. I learned a lot from her on looking what you have and incorporating it into something new to feed those that came to the kitchen to eat on those summer nights. Several of the recipes we made in the camp kitchen are in that cookbook and she had it wrapped up in a tea towel that I use to cover bread dough while it is rising. The main flour I use in all my cooking and baking is Thesco flour and that stems back to those days too, as she is the one that introduced me to it. <br />

Well, now, back to Sukiyaki. The recipe was one that came from her mother-in-law, Mary, who I also knew. She was a dear lady who had spent time as a missionary in China, I have no idea if this was a recipe that she acquired while she was in Asia (it is Japanese not Chinese) or if she got it somewhere else, but it was neatly laid out in this recipe with everything you needed, right down to an extra fuse. You prep all the veggies and meat ahead, arrange it on plates and your guests cook it right at the table. I decided this would be an excellent meal to practice using chopsticks and set about planning to invite the youth over for lunch on a Sunday after church. However, when my mother heard my plans - I had to borrow her electric skillet, she said I should feel free to practice on them since I hadn't made it before. Needless to say, I ended up having two Sukiyaki dinners and both were great fun. It is an excellent meal to get your guests interacting together, although it is best if they are not starved when they arrive, because it takes a little bit to get going.<br />

These are a specialty of Aberdeen, Scotland. They also seem to go by the name butteries. Which... after you make this recipe once, you understand. These rolls are high salt and high fat. A leftover from days when the fishermen sailing out of Aberdeen Harbour needed food to last the two weeks they were out (the high salt) and needed them to be a quick energy source (high fat).* Of course as soon as I heard about these I was immediately curious and had to try them for myself.<br />

As with any specialty dish, there seem to be quite a few variations and everyone with a strong opinion. Many seem to call for lard in place of all or some of the butter. And several called for bread flour. There were also quite a few mentions of using live yeast. This also turns out to be one of those foods you really wish you didn't have to realize how many calories are hiding in its crispy layers. A perfect reason to pop down to the local bakery. Er. If Aberdeen and Scotland didn't lie thousands of miles and an ocean away from where I live.<br />

After a bit of a search I decided on this recipe from over at Serious Eats <a href="http://www.seriouseats.com/recipes/2012/05/fast-breads-buttery-rowies-recipe.html" target="_blank">Fast Breads Buttery Rowies</a>. It uses all purpose flour, butter, and instant yeast. If I make them again in the future trying out the lard, I will probably try this recipe <a href="https://signorbiscotti.wordpress.com/2012/10/20/rowies-aberdeen-butteries/" target="_blank">Rowies (Aberdeen Butteries)</a>.<br />

This was the second time I've made them, and it went much more smoothly this time. (Read "less messy".) Partly because my kitchen was warmer (see notes on butter below), and partly because I rolled the dough out with a more gentle hand.<br />

I made this in the stand mixer, and it came together just beautifully. I vaguely remember adding more water the first time, but this time it didn't need it. I just let it keep mixing for awhile... and it turned out so soft.<br />

While I waited for it to rise I pulled the butter out, chopped it up in to slices, and left it to warm to room temperature. Then I went and messed around with seeds and dirt for a few minutes. <br />

Roll out the dough as per instructions, then slather with butter. A lot of butter. The softer it is the easier and less messy this will go. Not liquid though. I wouldn't hurry this along using the microwave, just let it set out a lot longer than the 20 minutes mentioned unless you have a very warm kitchen and chop it into fairly small slabs.<br />

When you go to roll this out, roll VERY GENTLY. This combined with the very soft butter, makes for a nice dry dough after rolling. If you see an area of dough starting to bubble out, either soften your roll or stop rolling completely there. You are about to get a messy butter burp if you don't.</div>

If you, like me, are the kind of person who has a fascination with peeling the layers of something apart (such as say peeling apart <a href="http://www.washingtoncitypaper.com/blogs/youngandhungry/files/2010/03/DSCN3606_opt.jpg" target="_blank">hoho cakes</a>.), you will love these! They come apart in crispy layers. The first time I made these, their texture reminded me a little of layers of fried wonton wrappers, but this time they had a little more of a flaky croissant texture. They are a bit on the salty side, and of course, heavy on the butter. I ate two with a bit of sour cherry jam, and then stuck the rest in the freezer before I could be tempted to go back for another...<br />

In a moment of inspiration, we decided to purchase a cooking class for 10 and invite a few other friends and our mother's for a mother's day celebration. The cooking class was put on by <a href="http://www.quincebakeryandcafe.com/" target="_blank">Quince Bakery and Cafe</a>, a local cafe that serves up food you don't necessarily expect on the square of Kidron, but oh so yummy. <br />

After our successful bidding, we invited our friends and they invited their mothers and, when the evening came, we all gathered in mom's kitchen for a fun evening together and wonderful food.<br />

Mother's Day is coming up again in a less than a month...I don't think I will be able to top last year's celebration....I know my mom enjoyed it, just this past weekend I was at her house and she served some red onions soaked in seasoned rice vinegar, one of the recipes we learned that evening.</div>
